Mango Chicken Salad

Serves 4

Ingredients
100g rice stick noodles
400g chicken breast fillets
Italian herb mix
1tbsp olive oil
Handful of snowpea sprouts
150g baby spinach leaves
2 mangoes, peeled and sliced
1 spring onion, chopped
ΒΌ Italian Dressing

Method
1. Cut chicken breasts in half length ways into thin fillets. Coat in olive oil and Italian herbs (or your favourite seasoning). Set aside for 30mins.

2 Cook chicken on grill pan or bbq. Slice into pieces.

3. Place noodles in a heatproof bowl. Cover with boiling water and let soak for 10-15mins until tender. Drain noodles and rinse cold water and drain again. Place in large bowl.

4. Add chicken, snowpea sprouts, baby spinach leaves, mango, spring onion and Italian dressing to noodles. Toss to combine and serve.
