Easy Cheesy Meatballs

This recipe is lots of fun for little chefs as they get busy rolling meatballs. You can even make double the quantity to have it on hand for another lunch or snacks. Little Chefs also do a great job crushing the cereal in a plastic bag with a rolling pin and really enjoy rolling and shaping the meatballs.

Makes about 16 meatballs

Ingredients
1/2 kilo mince beef, preferably lean ground
1/2 tsp salt
Pepper
1 cup grated low fat cheddar rcheese
1 egg
1/2 cup crushed cereal (Corn Flakes, Weet-Bix)
1 small can or jar of tomato puree/ tomato passata
Olive Oil

Method
Big Chef and Little Chef
Combine the mince, grated cheese, egg, crushed cereal and salt & pepper in a large bowl and mix together lightly.

Little Chef may like to do the mixing with nice clean hands.

Little Chef
Roll the mixture into small ball shapes – they don’t have to be perfect! Place meatballs on a lined baking tray.

Big Chef
Preheat oven to 180C and bake or heat olive oil in a deep pan and cook until browned.

Pour tomato puree/ tomato passata over meatballs. Cook slowly for 20 minutes until meatballs are done.

Serve with pasta or hot bread and salad.
